As we continue to grow and evolve, we're looking for an Executive Sous Chef to join our team on a permanent contract. The Role As Executive Sous Chef, you will work closely with the Director of Culinary to lead, inspire, and develop our large, diverse kitchen brigade. This is a senior leadership role with significant responsibility for day-to-day culinary operations, quality standards, team development, and consistency across all outlets. You will be instrumental in driving innovation while maintaining the highest standards of food quality, presentation, and service, in line with Adare Manor's five-star expectations. Key Responsibilities
- Support in the overall leadership and management of all kitchen operations
- Ensure consistent delivery of exceptional food quality across all restaurants, banqueting, and events
- Lead, mentor, and develop Sous Chefs and the wider kitchen team, fostering a positive and professional culture
- Play an active role in menu development, tastings, and seasonal innovation
- Maintain the highest standards of food safety, hygiene, and compliance with HACCP regulations
- Oversee stock control, ordering, and cost management to support budgetary targets
- Collaborate closely with front-of-house, events, and senior management teams to ensure seamless guest experiences
- Step into the Executive Chef role when required, ensuring continuity and leadership presence
The Ideal Candidate
- Proven experience as an Executive Sous Chef or Senior Sous Chef in a five-star hotel or high-end restaurant environment
- Strong leadership skills with a passion for developing and motivating large teams
- Exceptional attention to detail and a genuine commitment to culinary excellence
- Creative, organised, and calm under pressure in a fast-paced luxury environment
- Strong understanding of food cost control, kitchen administration, and operational efficiency
- A collaborative, hands-on leader who leads by example
