Job description:
Hyde Bar & Gin Parlour is looking for a restaurant manager. The Restaurant Manager will oversee the operations in both of our restaurants, to ensure an excellent guest experience with genuine friendly service is delivered every time. The ideal candidate will have exceptional customer service and team leadership skills to successfully run the team. To oversee all aspects of dining in the hotel from breakfast to dinner including private functions and special events.
Key Deliverables and Responsibilities
- Establish and implement standards of performance within the restaurant areas of the hotel, ensuring that all services offered are of the highest standards of quality in accordance with the hotel’s standards of performance and customer care. Ensuring that all employees are trained in the delivery of same. Thus, ensuring the smooth and efficient running of the Restaurant & Private Dining spaces in relation to food & beverage service.
- To ensure all guests receive a positive and memorable dining experience to encourage repeat business. To tend to guests promptly and professionally, ensuring they are welcomed and seated in a courteous and timely manner.
- Work closely with HOD’s, particularly the Bar Manager to ensure to ensure that a high quality of service is always maintained, and that service runs efficiently on a consistent basis.
- To ensure that your department & team is kept fully informed of guest requirements and changes to business patterns
- To accept ownership, and control of department budgets and costs, working with Management in reducing operating costs and to increase average spends and improve yield management within the department.
- To operate the POS systems effectively, ensuring that billing and cash handling procedures are adhered to. Investigate and report on any discrepancies. Ensure POS is updated when menu items or prices change
- Effectively manage the roster and schedule for the team based on activities and business levels. Coordinate the daily work and activities of the team.
- Ensure that departmental holiday planning is implemented for operational and financial efficiency
- Work closely with the Sales & Marketing team with regards restaurant promotion, group bookings and special events. Assist in response to reservation /social media enquiries and respond to all guest feedback.
- To maximise all sales opportunities and implement up-selling procedures within the department.
- Maintain regular presence and visibility in the restaurant, owning the environment and attitude of the restaurant team.
- To assist in recruitment & selection of new employees. Oversee onboarding of new staff and ensure all safety training is complete as per company operating procedures.
- To ensure the development and training of staff in new systems methods and procedures that may be introduced into the restaurant areas from time to time. To continually assess the training and development needs within the department.
- To set a good example for management and staff regarding punctuality, attendance, attitude, and application to work.
- To maintain fair discipline and to foster a spirit of co-operation and pride in the daily work lives of the management and staff members throughout the restaurant and hotel. Coach and mentor staff as appropriate to improve performance.
- To ensure staff are correctly dressed in full uniform, clean and ready for work at the appropriate times.
- To maintain the required standards of operational hygiene within all areas of the Restaurant & Stillroom operation.
- To be aware of the Statutory Hygiene regulations and to ensure that all staff strictly conform to the requirements.
- Provide weekly reports to the GM on performance of restaurant department with details of future bookings, guest feedback, operational concerns, and employee performance.
- Consider Company Values in all decision making, training and interaction with staff and guests. Ensure your team are aware of the 5 company values and their respective indicative behaviours.

Professional requirements and Experience
- 2 plus years’ management experience at Duty manager Level
- Relevant business or hotel-related qualification.
- Customer centred approach.
- Strong Food & Beverage experience with fine dining experience an advantage.
- Smart professional outlook with an innovative management style and a finger on the pulse for emerging trends.
