• To proactively manage all aspects of the guest experience in the Falls Restaurant and the private dining rooms in the Hotel.
• To foster a culture of knowledge and a passion for good food and wine amongst all associates in the department and a desire by all members to share knowledge and a love of food and wine.
• To manage the department to the highest operating and hygiene standards while achieving the agreed elements of the financial budget for The Falls, Private dining rooms including WPCC dining and Room Service.
• The role also has responsibility for breakfast, lounge dining and afternoon tea.
• Overseeing service staff and supervisors on the floor during service periods and overseeing room service, private dining rooms and WPCC for functions meeting food and T/C breaks.
• The role needs to have a team approach and be very customer and people focused.

The role focuses on supporting the day-to-day activities in food & beverage outlets, the Falls, room service, the lounge and private dining rooms. This role is accountable for the service standards and hygiene standards and the total food and wine sales budget in the hotel. You are responsible for the initial staff induction to the department and the ongoing training and development of all associates within the department. You are responsible for the stock within the department and the stocktaking of all departmental stock, maintenance and purchasing of crockery and cutlery and table linen and equipment, maintenance of equipment within the department. Leadership is crucial in this role, and it is important to examine and manage the raising of all standards carefully. Setting a solid foundation for improvement in all areas of our offerings is essential and should be approached with great care and attention. Responsible For: All Restaurant, food service and room service personnel Areas of Responsibility: Falls Restaurant all services, breakfast, lunches should one take place, dinner, room service, lounge dining, private dining rooms and WPCC dining, Candidate Profile The ideal candidate will have the following experience in a similar role:

• 3+ years experience in a similar role
• 3-5 years fine dining managerial experience
• Proven experience in leading a F&B team
• Excellent It Skills including a proficient user of MS Office and excel.
• Exceptional attention to detail, organisational, negotiation and communication skills are a must including fluent spoken and written English.
