NPD Technician Company Description

Milish Bakery is a privately owned family bakery established in 1959, specialising in the development and manufacture of premium muffins and scones. Originating as KC Confectionery on Dublin’s High Street, the business has evolved into one of Ireland’s leading contract bakery manufacturers, supplying customers across Ireland, the United Kingdom, and Europe.

With generations of baking expertise, Milish Bakery has built a reputation for innovation, product quality, and strong customer partnerships. Product safety, consistency, and integrity are at the heart of everything we do.

Role Overview

We are seeking an enthusiastic and hands-on NPD Technician to join our New Product Development team based in County Dublin.

This is an excellent opportunity for someone with a passion for baking, food innovation, and product development to play an active role in bringing new bakery products from concept through to commercial launch.

Working closely with the Product Manager and cross-functional teams, the successful candidate will support the development of new products and the continuous improvement of existing recipes, with a particular focus on muffins and scones.

Key Responsibilities

  • Prepare and bake product samples for customer presentations, internal evaluations, and development projects.
  • Support new product development projects from concept through to launch.
  • Conduct product trials within both the NPD kitchen and production environment.
  • Record formulations, process parameters, trial results, and technical documentation accurately.
  • Assist with shelf-life studies, sensory evaluations, taste panels, and product assessments.
  • Support the translation of customer briefs into commercially viable bakery products.
  • Maintain ingredient, packaging, and specification records.
  • Assist with nutritional information, product documentation, and sample databases.
  • Source materials and ingredients for trials and development activities.
  • Support factory trials, scale-up activities, and product launches.
  • Maintain high standards of hygiene, housekeeping, and food safety within the NPD area.
  • Collaborate closely with Production, Quality, Procurement, and Commercial teams.

Skills and Experience Essential

  • Qualification or experience in Food Science, Bakery Technology, Culinary Arts, Nutrition, or a related discipline.
  • Strong practical bakery skills, including ingredient handling, recipe scaling, mixing, baking, and product evaluation.
  • Excellent attention to detail and accuracy when recording formulations and technical data.
  • Understanding of food safety, HACCP principles, and quality standards.
  • Good organisational and time-management skills.
  • Strong communication skills and the ability to work effectively within a team.
  • Ability to work in a fast-paced manufacturing environment.
  • Valid permission to work in the Republic of Ireland.

Desirable

  • Previous experience within a bakery, food manufacturing, kitchen, quality, or NPD environment.
  • Experience supporting factory trials, product launches, or continuous improvement projects.
  • Competence in Microsoft Excel and basic data analysis.

Working Hours

  • Full-time position
  • 38.75 hours per week
  • Monday to Friday
  • 9:00 am – 5:00 pm

Salary

  • €14.15 per hour
  • Equivalent to approximately €28,512 per annum based on a 38.75-hour working week
  • Salary: €14.15 per hour. Remuneration may be reviewed for candidates with significant relevant bakery, NPD, or food manufacturing experience.

Due to the nature of the role, flexibility in working hours is required. The employee may be required to vary their start and finish times to support operational requirements, product trials, customer visits, production runs, product launches, project work, and other business needs.

The normal hours of work will generally fall within standard daytime operating hours; however, no specific start or finish time is guaranteed, and the employee is expected to work flexibly to meet the requirements of the position.

Benefits

  • On-site parking
  • Bike to Work Scheme
  • On-site canteen facilities
  • Opportunity to work within a growing and innovative bakery business
  • Hands-on involvement in exciting new product development projects
